The second wine at the Colourfulwines.com Wine & Chocolate tasting. This is a dry Rose sparkling wine made organically from the Spanish stalwart grape: Garnacha. Cava is the only Spanish DO that isn’t geographically based. The majority of Cava is produced in Cataluña, but this particular wine is from Valencia. The first Valencian Cava I have tried. I liked it so hopefully we’ll be able to try some others in the future.
This is the perfect summer sparkler. It is a very light and refreshing wine. A lovely pale salmon pink with scents of summer berries: strawberry and raspberry. The berries come through in the flavour but not strong and it has a clean citric finish.
It was paired with a 64% Ecuador dark chocolate made from Arriba Nacional de Manabi coco and filled with dried strawberry, raspberry and cherry pieces.
This pairing was delish! I scoffed the lot in record time. The wine was fresh enough to work with the chocolate and the fruit pieces in the chocolate complimented the summer berries in the wine. Both chocolate and wine were good by themselves but together they were heavenly.
