This sparkling white wine, made using the same grapes and methods as a Cava, has been aged with lees for 36 months. It is a clear medium gold colour with a clean medium intensity nose of yeast, red apple, citrus, honey and blossom. All very promising so far.
It tasted more of green apple and citrus fruit with hints of blossom, mineral and yeast. I personally would have liked more of the flavours promised in the nose to come through, especially the blossom and yeast, because I really like those flavours. A light bodied dry wine with high acidity and a medium finish. It was a nice clean refreshing wine. Certainly a very good wine and a lovely example of Cava, though not sure if it is worth the serious amount of effort the bodega puts into its production.
